Southwest Ranch Dressing Recipe

On Tuesday I decided to make quesadillas on a whim.  Thanks to a food hoarding obsession I pretty much have the ingredients to make any recipe on a whim (I get the grocery shopping/ growing obsession from my father.  The cooking obsession comes from my mother :) ) I decided that the quesadillas needed a little kick to really bring the flavors together and I decided to whip up some Southwest Ranch Dressing.  The recipe was very quick and easy so I thought I’d share it.

I started with about 2/3 cup of ranch dressing (you can use 1/2 cup of fat-free sour cream mixed with a part of a packet of hidden valley ranch mix and a bit of milk to thin for a low-fat version).

To the dressing I added:

A heaping teaspoon of canned green chilis

Chilies

A heaping tablespoon of diced onions.

Onions

2 teaspoons of Frank’s Hot Sauce.

RedHot

I threw  everything into the magic bullet and chopped until smooth.

It was a quick way to add a little extra flavor to our dinner.  Jon loved it and even took to dipping bread in it after dinner was finished.

On another note, I went for a run on my treadmill last night.  I HATE the treadmill and find it 10x harder to run on.  We’re losing hours of daylight fast and the hours of light that are left after I get home from work are needed to pick the garden and do chores.  We obviously don’t have any street lights here so running in the house is becoming necessary for me.  Does anyone have any tips to make running on the treadmill a bit more manageable?
