Leftovers

After the holiday dinners are over I only have one request.  Can I have the carcass! :)

I acquired 4 turkey carcasses, combined it with all the vegetable “garbage” I’ve frozen throughout the year (onion skins, carrot peels, leaves off of the celery and potato skins) and made 13 quarts and 1 pint of broth, along with a big pot of homemade soup.

The treasure after 6 hours of boiling…

Don’t forget to ask for the leftover bones at your next holiday meal!  It’s a great source of FREE food!!

Our grape vines went from this in 2010:

To this in spring of 2011:

And this year we’re happy to announce we actually got some grapes!!

And we turned them into 9 jars of grape jelly!!

I’m thrilled that pruning them helped and that we didn’t kill the vines ;)

I have to say honestly, I totaled the number and thought “wow, that’s low”.  I thought we produced more than that!  This doesn’t account for what we’ve consumed directly or froze, but still it feels like we did more then this.  Hopefully my notes are correct!  Either way that is certainly a good bit of our food for the next year!!  We could still can more, but I’m not going to any great lengths to cover our plants and protect them from frost.  We have been covering the sunflowers for the wedding and that is enough of a chore!  I just don’t have the time, energy or blankets to cover our food garden too!

How has your summer wrapped up?
