Baby number 2 is a….

This delivery was super easy.  My dad saw she was in labor, checked her and headed into the house to make a couple phone calls.  By the time he went back out this little guy was walking around!!  Literally almost no time at all.  He’s doing great.  Much smaller than his sister, but that was to be expected.  We picked the bull that we used for his semen and wanted smaller calves this time!

Cow Update

After yesterday’s post about tongue, I figured you would all enjoy an update on our cows, haha.

 

Our steers, lovingly named the Dopey Brothers are pictured below.  They are full blood brothers.  The bigger steer (front) will be butchered late spring/ early summer.  He is a HUGE steer.  We’re thinking some steaks will be 12-18 inches wide! The smaller steer will be butchered in a year or two.

From left to right, our calf (so much for being a POLLED hereford), my dad’s heifer and our mama cow. 

Our mama cow is pregnant and due late April or early May.  Our calf has come into heat 3 times already and we’ll be ready to breed her in the next few months.  My dad’s heifer is still a little young, but we’ll probably breed her when our mama is ready to be bred again.  We own 1/2 of a bull with my grandmother so all of our ladies will be bred by him next.

Eating Cow Tongue

So we had cow tongue for dinner the other night.  Despite what you may think, it was actually pretty tasty.  It’s a little bit of work, but definitely worth getting from your butcher.  You could totally serve this to people without them ever even noticing…tastes just like roast beef Smile

How to Prepare Cow Tongue-

Remove tongue from wrapping

Place tongue in a pot of boiling water (I put it right in frozen)

Boil for 2 hours (or when you can pierce easily with a fork) and remove cooked tongue from boiling water

Let tongue cool

Slice off the “skin” and taste buds

Now, you can either eat it like that, or go one step further and follow my recipe for Crock Pot Pulled Beef Tongue.

Crock Pot Pulled Beef Tongue

Ingredients:

1 cooked beef tongue

14 oz of your favorite BBQ sauce

2 tbsp of vinegar

 

Place sliced beef tongue in a small crockpot.  Cover with remaining ingredients and cook on high for 4 hours.  Shred beef and serve open faced on toast with your favorite cheese.
